Growing research continues to suggest that eating a diet consisting of mostly whole foods is associated with more weight loss (2,3,4). Not to mention that highly processed foods tend to be higher in added sugar, sodium and trans fats, which research suggests may play a role in increased inflammation and actually counteract your weight loss efforts (5).  
Generally, vegetables are dense in fiber and essential vitamins and minerals and are thus a required part of a balanced Paleo diet. Balance is key here: vegetables, while essential, are best consumed alongside a variety of food groups. They, nor any other food group, cannot alone constitute a healthy diet. More than that, not all vegetables are created equal, nutrition-wise. They are, however, delicious and provide tons of creative opportunities to diversify your diet!
I’m sorry to hear these didn’t work out for you. I’m not sure what you mean by “the flour never became anything but crumbled powder.” Were you making your own almond flour, and the ground almonds didn’t become fluffy enough? Or do you mean that there wasn’t enough moisture for the cookies to hold together? I’ve made these cookies many times, and this ratio of maple syrup and coconut oil (or butter) has always produced a delicious result. You can always add additional coconut oil or maple syrup if the cookie dough doesn’t look like it will hold together. I hope you and your family have a Merry Christmas, regardless!
Shaping the almond flour/coconut flour cookies. You can shape these cookies in the same manner as the tapioca variety, but you will need to flatten each ball of dough into a 1/2-inch thick disk on the baking sheet after rolling into a ball. The coconut flour cookies will not spread as readily. I believe in parchment paper. It’s a DREAM for clean up and prevents burning. I hardly ever bake without it, and these ginger cookies are no exception. Some ginger cookies have a tendency to scorch on the bottom, and I’ve found that a light-colored baking sheet lined with parchment paper (or a silicone baking mat) is a fail proof plan for perfectly baked ginger cookies. (I think even Ina would approve.)

Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. So don’t try to replace it with Honey or Maple Syrup.
Unless a package of beef jerky says it’s Paleo, it’s best to make it on your own, and this recipe will walk you through the process. She’s come up with the perfect blend of spices and the right method for how to get the meat just right. You won’t want to go back to store bought jerky once you make a batch of this. You get to do quality control, choosing lean cuts of sirloin to make it. Then add the spices and seasoning like garlic powder and onion powder. Red wine even makes an appearance, and you’ll be happily surprised at the finished product.
I just found out that my friend has a nut allergy so I needed to alter a few recipes. After reading through a few paleo web pages, I’m finding that sunflower flour is a good 1:1 substitute for Almond flour. I’m testing that ratio with these cookies now. For a while, because of an issue with the amount of nuts that are “OK” for the diet I started substituted a home-made pumpkin seed flour and entree’s taste just as delicious!
We made these this afternoon and they were great! My husband is fond of mint with chocolate so instead of chocolate pieces or chips, we used Andes Mints pieces which I have only found at Walmart. We used a 1″ cookie scoop and came out with 30+ cookies. We wanted them a little more crisp, so we cooked them longer than the recipe’s 10 minutes. Ive made a cople of your desserts now and have been SO impressed!!!!! Thank you for these great recipes!! My husband eats Paleo so I wanted to test these out for him today. Between my parents and my 4 yr old son, they ate almost the whole batch!! My dad even loved them and he has been known to eat 6 crispy kremes in one sitting without thinking twice! 😉 I used our blendtec blender to grind some raw almonds into flour (hadn’t tried that before) and with that the cookies came out delicious!! If you're interested in the paleo plan but don't think you want to be so strict, you don't have to be all-or-nothing with your approach. Consider adopting some eating patterns from paleo and skipping the ones that don't work for you. For example, try just eating more fruits and vegetables and cutting down on added sugars. If you feel unsure about grains or dairy, talk to your doctor or a registered dietitian to determine what's best for your body.
This is the first review on a recipe I have ever left, which is saying a lot. I’ve tried lots of Paleo desserts, and most of them aren’t good. These cookies really are great and probably the best classic cookie I’ve ever had, period. Wonderful flavor. The only thing I changed was I used coconut manna instead of butter. The only question I have is if this caused my cookies to not really fall much from the balled dough. They sort of held a ball like shape. I did try flattening them some before baking, but that seemed to make them slightly crunchier. Just wondering if anyone knew. Also, I literally ate 6 of these just now and I have never eaten that many cookies in one sitting…good thing they’re packed with great ingredients.
