Hi Julie. Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. Since cacao mass has no sweetener, I imagine it would be pretty bitter in cookies, but you could give it a shot – I’ve never used it before so I’m unsure of how it will work.
Ive made a cople of your desserts now and have been SO impressed!!!!! Thank you for these great recipes!! My husband eats Paleo so I wanted to test these out for him today. Between my parents and my 4 yr old son, they ate almost the whole batch!! My dad even loved them and he has been known to eat 6 crispy kremes in one sitting without thinking twice! 😉 I used our blendtec blender to grind some raw almonds into flour (hadn’t tried that before) and with that the cookies came out delicious!! They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. So don’t try to replace it with Honey or Maple Syrup.

Hi Steve, coconut flour absolutely will not work here because it’s 3x more absorbent than almond flour. You only want to use coconut flour in recipes that call for it because it performs so uniquely. If you had to use coconut flour, you would want to use 1/3 of the amount, but I would recommend using my coconut flour chocolate chip cookies instead, which have been formulated specifically to use that kind of flour.

Thanks for the suggestions! We loved these so I plan to make another batch and I’ll experiment with the soda. I think I am just sensitive to that taste so pick it up, my husband didn’t at all. Today it was gone so that might be my answer to all things with soda, just wait overnight. Although that will be hard…I tend to try one or three as soon as they are cool enough to hold. I try not to keep chocolate chips in the house because I will eat them by the handful. 🙂 But I made these (without the chips) in a chocolate craving three days ago and again today for 4th of July celebrations! SO GOOD. After reading all the comments about crumbly cookies, I used my best judgment with the texture and ended up adding about an extra 2 TBSP of coconut oil to the mixture since my “pure” almond butter was still rather dry. They came out perfect. Soft to be sure, but that’s what I love about them. I get more of the almond butter taste up front but they linger with the deepest chocolatey fudge taste. Excellent. The other colors only have the ingredients listed that are not included in the maroon variety. All you need is a good blender and a food dehydrator. Although I have dried fruits in the oven before. The oven is faster but necessarily better. Just turn it on the lowest heat possible. I put links to two different dehydrators because one is way more affordable than the other. I have the cheap one and it works fine. But if you think you might use it a lot it might be worth the investment to get the more expensive one. Since the skittles are dried they can be stored at room temperature for a long time. That makes them handy to keep in your purse or bag for a time. I’ve also been known to freeze. dried foods and they keep just fine for a really long time.
Wow! They were completely delicious and so easy to make!! I’m vegan so instead of using eggs I used chia, for those who don’t know how to use it: Whisk together the 1 tbs of chia and 3 tbs of water until well combined, then place in the fridge to set for 15 minutes. Pseudo grains, such as quinoa, amaranth, and buckwheat, are generally not recommended because they can cause grain-like digestive problems. Legumes means not only beans (including soy), but peas, lentils, and peanuts (including peanut butters and oils).

Oils are trickier. Loren Cordain, Ph.D., founder of The Paleo Diet Movement, breaks down which oils are healthy on the paleo diet: olive, walnut, flaxseed, macadamia, avocado and coconut oils are all allowed because they were gathered directly from the plant. While our hunter-gatherer ancestors probably did not consume flaxseed oil, it is allowed because of its content of high alpha-linolenic acid (ALA), a type of heart-healthy, anti-inflammatory omega-3 fatty acid.
Amanda -I haven’t ever tried them with less baking soda, but you might be able to give it a try. Baking soda often helps cookies spread (baking powder often “puffs,” baking soda often “spreads”), so you’d probably have some spread differences. If they spread too much, you can head this off by adding an additional 1-2 Tbsp of flour to the batter. If they don’t spread, you might be able to use less flour to offset the problem. Again, I don’t know for sure since I haven’t tested them with less baking soda, but I’d love to know what you think if you give them a try. (I just know how expensive paleo baking ingredients are, so I’d hate for you to have to waste any!)
Hi Kate! While I still use blanched almonds occasionally, I do use raw organic almonds, with skins, for most of my almond flour needs! Since I eat raw almonds with skins often, I don’t see how grinding them into flour would make them toxic. I’ve actually never heard of that before! After doing a bit of internet research, I believe the almonds you’re thinking of are called “bitter” almonds, and as I understand it, they are not the type of almonds you’ll find in any grocery store (because they’re toxic!).

I had baked these bad boys early Sunday morning just to double check the recipe for the 10th time before this post goes up (no joke). While mixing the dough, I realized I’ve baked these cookies more than anything else in the past two months (the paleo chocolate banana bread was a close second). Even though I’m not paleo or necessarily grain free, I love making paleo treats because they actually fill me up, don’t need as much sugar as your typical dessert and tend to be lower in carbs. Winning in all categories right there.
These gummy snacks are billed as being anti-inflammatory and use a host of ingredients that have been shown to help curb inflammation in the body, namely turmeric and ginger. The way they’ve made these into gummy form is through the use of gelatin, which is definitely a go on Paleo. There’s also other healthy items to really make these a vitamin-packed snack, including citrus juice of your choice and raw honey. By using natural ingredients like raw honey you’re eating food that is as close to nature as possible.
Alcohol is a no-no if you are strict paleo. Beer is made from grains, and liquor also contains traces of gluten. But, good news for cider-lovers: most hard ciders are gluten-free, so they are allowed. Check the label to be sure. Red wine is more accepted in the paleo community because it contains the antioxidant resveratrol, but sorry chardonnay lovers, white wine is technically not allowed.
Traditional french fries are something you’ll have to give up on Paleo, but this version has enough modifications to it that you can eat them as a replacement. They’re made from jicama, a food that is potentially better for you than potatoes, although Paleo purists would still want to avoid the whole french fry situation altogether. These are cooked up in coconut oil, one of the approved Paleo oils, and are using grass-fed cheese. They even show you how to make the sauce for the top.
Traditionally I’m not a huge fan of using several different gluten free flours in one recipes. I want the ingredients to be both accessible and have many different uses. So far, almond and coconut flour have become my go-tos (especially when it comes to paleo baking). Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.

This chipotle-infused dip is going to be spicy, but not so spicy that your eyes water. It’s balanced out by the butternut squash, which has a nice calming effect on the taste buds. I just made these for the first time and they are INCREDIBLE!! The only major modification I made was adding half the coconut sugar and I was pleasantly surprised that they are plenty sweet without the other 1/4 cup 🙂 I also ended up adding a few splashes of almond milk (I think my almond butter wasn’t well mixed and therefore a little too dry). Here’s a great game day dip that you can serve up and feel like you’re having a real treat. Use one of the chip recipes on this page to scoop up this flavorful dip. It’s a sure winner when bacon and bleu cheese join spinach and artichokes. It’s like taken a proven success and adding two more delicious ingredients to it. You may want to drop the bleu cheese if you know for certain that you can’t handle any cheese, but many Paleo eaters will make an exception for a bit of cheese on occasion.
Bananas, apples, oranges, berries (strawberry, cranberry, blueberry, blackberry, raspberry), plantains, grapefruit, pears, peaches, nectarines, plums, pomegranates, pineapple, papaya, grapes, cantaloupe, cherries, apricot, watermelon, honeydew melon, kiwi, lemon, lime, lychee, mango, tangerine, coconut, figs, dates, olives, passion fruit, persimmon.
These fig bars have a lot going on, and your taste buds are sure to thank you for such a nice midday treat. At the same time they are loaded with healthy things like apples, peaches, and the figs themselves. They’ve removed any trace of grains, and are using coconut flour to put them into bar form, with just the right amount of honey to make these sweet but not overly so. The use of cinnamon, nutmeg, and ginger really balances out the flavor profile for these, and you can eat them between breakfast and lunch, or between lunch and dinner so they’re very good to have handy.
These BLT bites have the T built right in because they’re served up on a cherry tomato. She’s using cream cheese here, which you can sub out Paleo approved cream cheese for and be all set. The B of the BLT is covered with a respectable amount of bacon per bite. The T comes in the form of spinach, so you’re getting a nutritional upgrade from plain old lettuce which doesn’t have nearly as many vitamins and nutrients that spinach has. Dust these with a bit of parmesan cheese, one cheese that most Paleo-ers accept as OK, and you’re good to go.
Shaping the almond flour/tapioca cookies. When you are nearly ready to bake the cookies, preheat your oven to 325°F. Line rimmed baking sheets with unbleached parchment paper. Remove the cookie dough from the refrigerator, remove the plastic wrap and using an ice cream scoop or two spoons, divide the dough into 14 to 16 portions, each 35 to 40 grams. Roll each piece of dough into a round between your palms, and place about 2 inches apart from one another on the prepared baking sheets.
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.
They say that low-fat weight-loss diets have proved in clinical trials and real life to be dismal failures, and that on top of it all, the percentage of fat in the American diet has been decreasing for two decades. Our cholesterol levels have been declining, and we have been smoking less, and yet the incidence of heart disease has not declined as would be expected. ”That is very disconcerting,” Willett says. ”It suggests that something else bad is happening.”
