These could possibly be my favorite cookie, ever. I love chocolate and peppermint together. They are so easy to make that my daughter makes them all the time. They have to be baked or cooked at all. The hardest part is waiting for them to cool and set in the frig for an hour. The candy canes are just for show because they aren’t Paleo. You can get all the peppermint flavor you need with the peppermint essential oil. If you aren’t 100% strict Paleo, go ahead and add a little bit of peppermint candy; I won’t tell anyone.

There are really only two ingredients that are spicy, but it’s jalapeno peppers and chorizo, which together make a pretty fiery combination. There’s also cream cheese being used, which if you want to be totally Paleo you’ll want to use a Paleo cream cheese recipe as a substitute. The fact that the whole lot is wrapped in bacon only adds to the deliciousness, and these are sure to keep you satisfied for quite awhile.

These turned out great! Usually my mom hates gluten free cookies I make but she approves of these lol. Also I deviated from the recipe a bit, added a little less baking soda and cut the almond butter with cashew butter thanks to winco allowing me to get small amounts of the nut butters without having to pay for the whole container. Thanks for the recipie! Oh and also added a smidgen of cinnamon – tastes like molasses cookies!!

Grains – especially wheat and anything with gluten. White rice is the least harmful of all grains and is added to dishes on occasions or for variety, it’s also part of the Perfect Health Diet protocol, which is what I follow. Meat and poultry (including offal) – grass-fed, free range meat is not only a kinder and more ethical way to consume animal products but it is also much higher in nutrients because of the way the cattle was fed and raised. These chips aren’t actually made from anything except the cheese. It’s asiago cheese, a hard cheese that doesn’t contain much lactose and is therefore looked upon as OK by some Paleo followers. If you know that you don’t process any cheese well you’ll want to take a pass on this one, but if you can handle it in occasional doses it’s worth it. The two ingredients are asiago cheese and rosemary, so it doesn’t get much simpler.
Oh, wow. These are GOOD. I made them exactly as is. First, I couldn’t stop eating the dough (which is bad because I’m pregnant and there is raw egg). Of course, snacking is completely optional on a Paleo diet. In fact, many people end up naturally eating only two meals per day, but it doesn’t mean that snacking is a bad idea, especially if the snack only contains healthy ingredients and prevents you from indulging with bad foods. They can also be great when on the go or as something to eat post workout. Just remember that your snacks should respect the basic principles of Paleo. This means that most fruits and nuts should be consumed only in moderation. Most fruits are high in the sugar fructose, which is toxic in higher doses and most nuts are high in polyunsaturated fat (PUFA), especially the omega-6 PUFA. Refer to my article on nuts and seeds to know about the best choices. This also means that snacks containing mainly saturated fat or animal protein are usually great.

Knowing what to eat is part of it, but following this fairly restrictive lifestyle in a modern environment surrounded by cookies and candy and bagels and pasta is really difficult! Factor in the “carb flu” you might go through in the first few weeks (as your body gets weaned off of carbohydrate fuel and habits), and most people give up on the Paleo diet long before it creates lasting change!


The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. So don’t try to replace it with Honey or Maple Syrup.

Ive made a cople of your desserts now and have been SO impressed!!!!! Thank you for these great recipes!! My husband eats Paleo so I wanted to test these out for him today. Between my parents and my 4 yr old son, they ate almost the whole batch!! My dad even loved them and he has been known to eat 6 crispy kremes in one sitting without thinking twice! 😉 I used our blendtec blender to grind some raw almonds into flour (hadn’t tried that before) and with that the cookies came out delicious!! Hi! This might seem like an odd question, but do you think I could bake / cook these on an electric griddle? 5 mins, then a flip and 5 mins more? I am thinking to try this at preschool and want a recipe that will cater to all children, with respect to food allergies / sensitivities or parents nutritional wishes. Perfect! I added pecans to your recipe and they came out perfect. The only issue I have is controlling myself so I don’t eat them all at once. I used butter instead of coconut oil and erythritol + molasses instead of coconut sugar to create my diabetic version of your cookie. I also added chopped pecans. Mmm-mm! Thanks. Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.

Rachel…First, I never…well VERY rarely…less than 1x a year or two…post replies or anything on sites where I find my recipes. These cookies are just delicious! I make them for my house and they are the go-to cookie for us. We never want to wait for them to chill! I roll them into a cookie log, wrap them, and then stick them in the freezer for about 15-20 and then make a few! I keep the roll frozen and cut off “slices” whenever we want them! They freeze exceptionally well! I’m not a big fan of coconut sugar, so when I first made them, I mixed in Florida organic and they were good. I also do most vanilla recipes with 2-3 different kinds of vanilla, and these are no exception. I use Wilton clear vanilla extract, vanilla bean paste and good ole’ McCormick pure vanilla extract, which throw these cookies over the top. Now, I can use the coconut sugar as written and the sweetness is perfect. All that to say Thank you for creating + sharing this awesome recipe!
Don’t feel bad that you can’t have Doritos now that you’re on Paleo, you just have to come up with snacks that aren’t bad for you. These chips use a mixture of coconut flour and almond flour, and have flax seed baked right in so you’re getting a fair bit of nutrition along with your snack. These make great dipping instruments for salsa, guacamole, or any Mexican-inspired dip. They won’t be short on flavor with all of the butter and spices they’re using, so you won’t feel like you’re missing out or stuck eating “health food”. Who knows, you might even end up preferring these.
Thank you thank you thank you for posting this recipe! I’ve been struggling with food sensitivities and this was my first Christmas with the new lifestyle. I was really missing baking but then I found these cookies and they have completely satisfied my baking urges! I made them three times over the holidays (and a few times since), and each time I had to fight off the rest of my family to eat my share. I was worried that they would taste too coconut-y, especially because the batter does, but they bake up beautifully with an amazing texture. I’ve tried lots of chips, from Lily’s to my neighborhood grocer’s organic; I’ve added walnuts and pecans, too. Every batch has been luscious. Again, many thanks!

Since moving our family to a mostly-Paleo way of eating a few years ago, our snacking game has totally changed!  Out with the starchy crackers. In with real food, nutrient dense nibbles! Nibbles that a little growing body will actually put to good use! That will actually keep them going until their next meal....with their sanity (and your's) intact.
If you crave soda, you might be low in calcium. The best source of calcium is in your leafy greens. Make yourself a big salad out of spinach, kale, watercress, turnip greens, some broccoli, and sesame seeds. If you do dairy, throw some cheddar in there, too. Top it all off with some homemade Ranch dressing or a nice oil and vinegar dressing. This snack will not only help increase your calcium intake, it’ll also fill you up and leave no room for that soda you want to drink.
These are absolutely incredible! I have been searching for a convincing recipe ever since I had to move to a restricted diet and these really do taste like traditional chocolate chip cookies. I have been baking gluten free for over 10 years and thought I had tried every cookie recipe out there, but alas I had not. I just made this recipe exactly as written and it is truly THE BEST GLUTEN FREE CHOCOLATE CHIP COOKIE OUT THERE! Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! It was awesome….so was the Avocado Chorizo Sweet Potato Skins….that is now my favorite sweet potato recipe! When is the next cookbook coming out? Your first one is being delivered tomorrow…..your favorite recipe?
I don’t like keeping track of how much I’ve eaten or obsessing over how many grams of a particular nutrient I’ve had. Not only do I hate counting calories, but I know that calories are really only half of the battle, as they’re not all created equal – 400 calories of Doritos do NOT have the same effect on your body as 400 calories of high-quality vegetables and protein.
Thank you for posting this! I have been practicing the paleo diet on and off for a few months and getting little cravings in between is hard because I know I can’t eat junk. This saves a lot of time and energy and I feel better knowing there are fun and easy paleo snacks to make without breaking your diet! Do you have any other ideas that may be easy and quick to make to save time and energy? Thanks :)

The real key to these, as I say in just about every recipe where I call for chocolate, is that chopped is always better than chips. It melts better because the wax in chocolate chips prevents them from saying melted and gooey, and chocolate chip cookies need to be melty and gooey. You can also control the percentage of cocoa in your chocolate by buying it in bars!
