Healthy granola is hard to find because most supermarket options are loaded with sugars and unnatural additives, not to mention grains and oats that make them Paleo-unfriendly. Rachel…First, I never…well VERY rarely…less than 1x a year or two…post replies or anything on sites where I find my recipes. These cookies are just delicious! I make them for my house and they are the go-to cookie for us. We never want to wait for them to chill! I roll them into a cookie log, wrap them, and then stick them in the freezer for about 15-20 and then make a few! I keep the roll frozen and cut off “slices” whenever we want them! They freeze exceptionally well! I’m not a big fan of coconut sugar, so when I first made them, I mixed in Florida organic and they were good. I also do most vanilla recipes with 2-3 different kinds of vanilla, and these are no exception. I use Wilton clear vanilla extract, vanilla bean paste and good ole’ McCormick pure vanilla extract, which throw these cookies over the top. Now, I can use the coconut sugar as written and the sweetness is perfect. All that to say Thank you for creating + sharing this awesome recipe!

6/30/16 update: I’ve been making these paleo chocolate chip cookies with chia eggs lately to make them vegan and they’re just as delicious! To make a chia egg, mix together 1 tablespoon of ground chia seeds and 2.5 tablespoons water. Let sit 5-15 minutes or until goopy like an egg. I’ve also tried these cookies using a flax egg but I didn’t like the taste.
These turned out great! Usually my mom hates gluten free cookies I make but she approves of these lol. Also I deviated from the recipe a bit, added a little less baking soda and cut the almond butter with cashew butter thanks to winco allowing me to get small amounts of the nut butters without having to pay for the whole container. Thanks for the recipie! Oh and also added a smidgen of cinnamon – tastes like molasses cookies!!
These chips are made from butternut squash, but you won’t be able to tell by the way they taste. They bake up so crispy and crunchy you’d swear it was a potato chip if you didn’t know any better. They are using gingerbread seasoning on these, which is an interesting choice for a snack, and sure to give your taste buds a new experience. Compared to most snacks you’ll enjoy the fact that these rank pretty well in terms of the amount of carbs they contain, as well as the calories. Not that you’re counting any of that stuff on Paleo, it’s just nice to know.
Absolutely a 5 star cookie. I’m still getting over how balanced they are: plenty sweet, light texture (crispy yet soft, almost like a shortbread) and satisfying. I’ve made other recipes with almond flour and was starting to get discouraged b/c they tasted too nutty, like they had an aftertaste. And while I prefer to use unrefined sugar, I don’t care for honey in cookies or cakes. Thank you, Megan. This is the go-to cookie I’ve been looking for. I made a double batch and just added a little grape seed oil b/c I ran out of coconut oil.

Gluten is a protein found in things like rye, wheat, and barley. It’s now being said that much of our population may be gluten-intolerant (hence all the new “gluten-free!” items popping up everywhere).  Over time, those who are gluten intolerant can develop a dismal array of medical conditions from consuming gluten: dermatitis, joint pain, reproductive problems, acid reflux, and more.[2]
The real key to these, as I say in just about every recipe where I call for chocolate, is that chopped is always better than chips. It melts better because the wax in chocolate chips prevents them from saying melted and gooey, and chocolate chip cookies need to be melty and gooey. You can also control the percentage of cocoa in your chocolate by buying it in bars!
Funny thing about those macaroons? If not made with the correct type of coconut flakes, they become… just the thing you did not expect. Which can be quite a bit disappointing. See, if you make those macaroons with these small coconut flakes, you’ll make the most delightfully round, thick, and perfectly tall macaroons. But if you use large coconut flakes, they go flat. Like a thick, delicious pancake that’s actually a cookie. Made out of coconut.
Legumes – beans, lentils, chickpeas and so on. Cashews are not legumes! There are some debates over whether some legumes are safe to consume in moderation, if prepared properly (soaked for 12 hours and then cooked really well to remove the phytic acid and make them easier to digest). You can read this article by Dr. Chris Kresser and this article by Dr. Loren Cordain and make up your own mind like we do. We include green beans and peas but avoid the rest.
Shaping the almond flour/tapioca cookies. When you are nearly ready to bake the cookies, preheat your oven to 325°F. Line rimmed baking sheets with unbleached parchment paper. Remove the cookie dough from the refrigerator, remove the plastic wrap and using an ice cream scoop or two spoons, divide the dough into 14 to 16 portions, each 35 to 40 grams. Roll each piece of dough into a round between your palms, and place about 2 inches apart from one another on the prepared baking sheets.
Get rid of the temptation – if you’re gonna go at this thing with a full head of steam, remove all the junk food from your house.  It’s going to take a few weeks for your body to adjust to burning fat instead of glucose, and you might want to eat poorly here and there. If there’s no food in your house to tempt you, it will be much easier to stay on target.
Thankfully I baked just one first, and was able to alter the recipe in time. It was so crumbly and dry, it was a bit like sawdust. (My almond butter was not runny at all, and it was pure almonds.) I added an extra egg and a few tablespoons of honey, hoping to get some moisture, and that helped considerably.I wouldn’t call them fabulous, but a good cookie if you’re Paleo or the full GAPS diet.
Bell peppers are a member of the nightshade family and although some people don’t tolerate digesting them well, they are considered paleo as most people don’t experience any ill effects and only benefit from their high nutrient content. Enjoy these vitamin C loaded vegetables raw or add them to meals for the disease protecting, anti-inflammatory effects of vitamin A, E and potassium content.
Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! It was awesome….so was the Avocado Chorizo Sweet Potato Skins….that is now my favorite sweet potato recipe! When is the next cookbook coming out? Alcohol is a no-no if you are strict paleo. Beer is made from grains, and liquor also contains traces of gluten. But, good news for cider-lovers: most hard ciders are gluten-free, so they are allowed. Check the label to be sure. Red wine is more accepted in the paleo community because it contains the antioxidant resveratrol, but sorry chardonnay lovers, white wine is technically not allowed.
Here’s a great game day dip that you can serve up and feel like you’re having a real treat. Use one of the chip recipes on this page to scoop up this flavorful dip. It’s a sure winner when bacon and bleu cheese join spinach and artichokes. It’s like taken a proven success and adding two more delicious ingredients to it. You may want to drop the bleu cheese if you know for certain that you can’t handle any cheese, but many Paleo eaters will make an exception for a bit of cheese on occasion.

Avocados make a great snack all by themselves, but they can be a little bland sometimes, and this is a great way to doll them up so they’re even tastier. This uses Greek yogurt, which is a fermented form of dairy and considered acceptable by some following the Paleo plan. Others see it as dairy is dairy and don’t eat it, so it’s up to you to decide if you want to incorporate a bit of fermented dairy like Greek yogurt into your diet or not. The rest of the recipe is just a bit of seasoning to help the avocado out in the flavor department.
