These could possibly be my favorite cookie, ever. I love chocolate and peppermint together. They are so easy to make that my daughter makes them all the time. They have to be baked or cooked at all. The hardest part is waiting for them to cool and set in the frig for an hour. The candy canes are just for show because they aren’t Paleo. You can get all the peppermint flavor you need with the peppermint essential oil. If you aren’t 100% strict Paleo, go ahead and add a little bit of peppermint candy; I won’t tell anyone.
“Many people have a Fred Flintstone notion of Paleo, that it’s meat-centric,” says Julie Mayfield, coauthor of Weeknight Paleo. While dairy products are fairly obvious, grains and legumes can be confusing. Wheat is an obvious grain, but corn and corn-based ingredients also fall into this category. Pseudo grains, such as quinoa, amaranth, and buckwheat, are generally not recommended because they can cause grain-like digestive problems. Legumes means not only beans (including soy), but peas, lentils, and peanuts (including peanut butters and oils).
The diet focuses on unprocessed, whole foods – healthy fats including saturated fat, grass-fed, free-range meat and eggs, lots of fish and seafood, vegetables, fruit, berries, nuts, seeds and some natural sweeteners. It excludes grains, legumes, processed sugar and most dairy. Some people include healthy dairy foods like kefir, full fat natural yogurt, some aged cheese and butter. That, of course, really depends on your sensitivities. We love this way of eating because it also focuses on local, organic produce and good farming practices.

It does find its way into a lot of Paleo cooking because it can be used in many different ways. Don’t knock it till you try it, because they tend to take on the surrounding flavors, in this case yummy maple syrup and coconut oil. So while you may have ignored parsnips a thousand times before, maybe it’s time to give them a chance. You may end up liking them, especially since you can’t go wrong when they’re baked in fat and sugar.
Hi Brenda. I haven’t tried using a sugar replacement in these cookies, but I would definitely try a granulated sugar replacement (like Xylitol and Splenda) as opposed to the drops. Coconut flour is much more absorbent than almond flour so I would not recommend using it in these cookies. As long as the SF chocolate is OK for baking, that will be totally fine. Good luck!

I just made these and they are so good! I used honey because I made these on a whim and didn’t have coconut sugar (plus it’s snowing here and I didn’t want to go out). My almond butter was very dry so I did have peanut/almond butter. Also had to crush up a dark chocolate bar because no chips on hand. I love how your recipes are so easy to play around with. Chia seeds also fall in this category. Buckwheat is the safest out of these.

With high amounts of heart-healthy omega-3’s, fish is a great form of protein to regularly include in a paleo diet. Select wild-caught fish to avoid ingesting the harmful chemicals that farmed fish are regularly fed. Both low-fat, white varieties of fish are considered paleo as well as high-fat fish such as salmon, tuna and mackerel and should both be included to satisfy your daily protein and fat requirements.
Edible seaweeds are too often overlooked on a Paleo diet, but they boast an unparalleled nutritional profile. Among many essential nutrients, most kinds of seaweeds are loaded with iodine, an essential trace element to life. Iodine is especially important for the proper functioning of the thyroid gland. For most people on a SAD diet, the only reliable source of iodine is iodized salt. Many people on a Paleo diet decide to shun added salt completely or to consume unrefined sea salt instead of regular iodized table salt. This is great, but with such a change, an effort should be made to eat iodine rich foods occasionally. Seaweeds are a great option.
These cookies are soft and chewy, yummy and still healthy. I eat them all the time for snacks and dessert. One thing I really like about cookies is that they have an automatic portion control. That is unless you eat too many of them. I also like the convenience of cookies because you can grab them and go. Sometimes I eat these for breakfast because they are so healthy.
While Paleo may seem like a low-carb diet, this isn’t its hallmark. There are many low-carb packaged foods with added sweeteners and other artificial ingredients, but a perfectly Paleo kitchen is completely devoid of packaged or processed foods and artificial ingredients, consisting only of fresh foods that are rich in nutrients—including starchy vegetables such as sweet potatoes. In fact, if you already don’t eat a lot of cereal, bread, and pasta, switching to a Paleo diet probably won’t significantly reduce your carb intake.
Hi. I used 1/4 cup of molasses and 3/4 cup of erythritol. When I first tasted the cookie I thought it was a little bit too sweet, but now the taste seems perfect. With the erythritol and molasses in place of sugar, I can eat the cookie without a negative impact on my blood glucose. I like them so much I’m going to bake more and send them to my mother who is also diabetic.

These are absolutely incredible! I have been searching for a convincing recipe ever since I had to move to a restricted diet and these really do taste like traditional chocolate chip cookies. I made these cookies the other day and they only lasted a day in my house. I made your chocolate chunks and they are so delicious. These little sandwiches are really pushing the limits of a conventional sandwich. Bacon is serving as the “bread” and guacamole is the thing getting sandwiched. Avocados are bona fide superfood, and contain plenty of potassium, fiber, and healthy fat. Bacon is often the scourge of most diet plans, but on Paleo it is allowed so why not dig in? The two go really well together, and you’ll often find them as add-ons to deli sandwiches because they simply taste that good.
I subbed the coconut flour with cricket flour (yes, ground up crickets) and got good results. I made it with coconut oil and eggs and portioned them out and then froze them before baking. I baked the first batch at 325 in a convection oven and it spread quite a bit so I baked the next batch at 350 (convection oven) and it still spread but much less.
Here’s a three-ingredient kebab combo that’s great to prep ahead of time (and trust us, they keep well enough in the fridge for a next-day snack). Cut chicken breasts into cubes and marinate in Tessemae’s Lemon Garlic Dressing for 1-3 hours. Thread cubes onto a skewer and grill for about 15 minutes, then garnish with fresh parsley. No extra sauce needed.

I wasn’t going to make them so big because I like to indulge in moderation but I decided to try giant cookies and I may never go back! I believe the size plays a big part in the success of this cookie but I’ll try them smaller next time and let you know the difference! We made these this afternoon and they were great! My husband is fond of mint with chocolate so instead of chocolate pieces or chips, we used Andes Mints pieces which I have only found at Walmart. We used a 1″ cookie scoop and came out with 30+ cookies. We wanted them a little more crisp, so we cooked them longer than the recipe’s 10 minutes. There are really only two ingredients that are spicy, but it’s jalapeno peppers and chorizo, which together make a pretty fiery combination. There’s also cream cheese being used, which if you want to be totally Paleo you’ll want to use a Paleo cream cheese recipe as a substitute. The fact that the whole lot is wrapped in bacon only adds to the deliciousness, and these are sure to keep you satisfied for quite awhile.
Salsa is generally something that you can have on Paleo, you’ll just want to check the ingredients list to make sure that they haven’t added anything that’s not allowed. If you buy organic salsa you should be fine. In this recipe they’ve gone with fire roasted tomatoes, which will pack a bit of heat with them. They’re also using hot green chiles which will get your attention, and which might make this a no-go for those that don’t like their salsa too spicy. I like these Paleo pumpkin chocolate chip cookies because they are full of pumpkin flavor, they are not too sweet and they have kind of a cakey texture. That’s what I expect from a pumpkin cookie. These are really good, I don’t want to brag but they are a lot better than the ones you buy from the store. Even those made in a bakery. They are actually pretty healthy too because they only have 1 tablespoon of oil in the whole batch and only 2 tablespoons of honey. I sweetened them up with a little applesauce too.
I’ve somehow managed to keep baking, and blogging, and photographing, and writing, through every year and step of college. In some ways, I think my college career would have been different if I hadn’t been committed to Bakerita.
