Here’s an interesting take on hummus, which is necessary because traditional hummus is not something you can have on Paleo. They’ve replaced the garbanzo beans (aka chickpeas) with a combination of zucchini and avocado, and the result is something that looks a lot like hummus, and tastes really good too. All of the other ingredients in hummus are present, like garlic, tahini, lemon juice, and cumin, so as long as you’re not a hummus snob you should be pleasantly surprised by this concoction.
I’m vegan, and my boyfriend is (mostly) paleo. As soon as November hit I got a serious craving for chocolate chip cookies! I wanted to make something we could both enjoy, and after much research, I landed here. My guy is a chef, so he’s quite the critic. Until NOW, I haven’t been able to impress him with vegan/grain free cookies. This recipe is perfect! I made my own almond butter (wouldn’t have if I hadn’t run out…a blessing in disguise!), and used the coconut sugar, chilling it like you said. Hi Steve, coconut flour absolutely will not work here because it’s 3x more absorbent than almond flour. You only want to use coconut flour in recipes that call for it because it performs so uniquely. If you had to use coconut flour, you would want to use 1/3 of the amount, but I would recommend using my coconut flour chocolate chip cookies instead, which have been formulated specifically to use that kind of flour.

It stuck because I really think of these as the world’s easiest cookies. To make a batch, all you do is combine almond flour, baking powder, maple syrup, and vanilla extract in a large bowl and stir. That’s it! No butter, no eggs, no chilling the dough (or rolling it out). You just need four ingredients and a little elbow grease. After about 10 minutes of baking, you’re rewarded with macaron-flavored cookies that are crisp on the edges and chewy in the center.
The second my mom saw these, she immediately started making plans to hide and portion them. She has the same problem I do with, ya know, not eating the whole batch. In one sitting. She gushed over them, and asked me, “HOW do you do it??” And I’m like, “HOW do you cook so well?!” My mom thinks it’s the funniest thing in the world that she cooks savory food like a boss, and I pretty much exclusively bake.
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.

These are great! I do a lot of gf baking but usually use a gf flour mix (like Bob’s) so was curious about how these would be. Love them. Not too sweet (like so many desserts are) but definitely sweet enough. I used 1/2 butter and 1/2 coconut oil (because I like the richness butter adds, and was low on coconut oil) and texture was perfect (I love that they aren’t greasy like a lot of choc chip cookies.) And I doubled the recipe because when I make cookies I like to have lots! Toddler approved:-)
Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.

I was really missing baking but then I found these cookies and they have completely satisfied my baking urges! I made them three times over the holidays (and a few times since), and each time I had to fight off the rest of my family to eat my share. I was worried that they would taste too coconut-y, especially because the batter does, but they bake up beautifully with an amazing texture. I’ve tried lots of chips, from Lily’s to my neighborhood grocer’s organic; I’ve added walnuts and pecans, too. Every batch has been luscious. Again, many thanks!

I just found out that my friend has a nut allergy so I needed to alter a few recipes. After reading through a few paleo web pages, I’m finding that sunflower flour is a good 1:1 substitute for Almond flour. I’m testing that ratio with these cookies now. For a while, because of an issue with the amount of nuts that are “OK” for the diet I started substituted a home-made pumpkin seed flour and entree’s taste just as delicious!

To make a chia egg, mix together 1 tablespoon of ground chia seeds and 2.5 tablespoons water. Let sit 5-15 minutes or until goopy like an egg. I’ve also tried these cookies using a flax egg but I didn’t like the taste.

Thankfully I baked just one first, and was able to alter the recipe in time. It was so crumbly and dry, it was a bit like sawdust. (My almond butter was not runny at all, and it was pure almonds.) These apple chips will do a good job of satisfying your need for something crunchy, as well as something sweet. They’re baked, not fried, so right off the bat you’re coming out ahead than if you were to eat an ordinary chip. These are apples and not potatoes so you’re avoiding eating potatoes, one of the foods not allowed on Paleo. The ingredients list contains just two items, apples and cinnamon, so this recipe is as pure as it gets, especially if you’re using organic apples, like you’re supposed to.

Hi! Sorry for just now seeing your question. In US English recipes, almond flour always means what you probably call “ground blanched almonds.” We don’t even have the deoiled / defatted “almond flour” that’s sometimes sold in other countries. Coconut flour is coconut flour. “Coconut flour is a soft flour produced from dried coconut meat.” I hope that helps!
