I try not to keep chocolate chips in the house because I will eat them by the handful. 🙂 But I made these (without the chips) in a chocolate craving three days ago and again today for 4th of July celebrations! SO GOOD. After reading all the comments about crumbly cookies, I used my best judgment with the texture and ended up adding about an extra 2 TBSP of coconut oil to the mixture since my “pure” almond butter was still rather dry. They came out perfect. Soft to be sure, but that’s what I love about them. I get more of the almond butter taste up front but they linger with the deepest chocolatey fudge taste. Excellent. Thanks for my new go-to Paleo treat!

Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.

When I placed them in the fridge – I decided to try rolling them into a log so that I could just slice and bake and for me – they turned out great and that was so easy to do. I like these Paleo pumpkin chocolate chip cookies because they are full of pumpkin flavor, they are not too sweet and they have kind of a cakey texture. That’s what I expect from a pumpkin cookie. These are really good, I don’t want to brag but they are a lot better than the ones you buy from the store. Even those made in a bakery. They are actually pretty healthy too because they only have 1 tablespoon of oil in the whole batch and only 2 tablespoons of honey. I sweetened them up with a little applesauce too.

Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. Since cacao mass has no sweetener, I imagine it would be pretty bitter in cookies, but you could give it a shot – I’ve never used it before so I’m unsure of how it will work.
Wow! They were completely delicious and so easy to make!! I’m vegan so instead of using eggs I used chia, for those who don’t know how to use it: Whisk together the 1 tbs of chia and 3 tbs of water until well combined, then place in the fridge to set for 15 minutes. Use as you would an egg in many of your favorite baking recipes. Thank you for such a tasty recipe!! <3
Roll the dough into 8 (75-gram) balls and place the remaining 1/4 cup (43 grams) of chocolate chips on the top and on the sides of the dough balls. Dairy is a touchy subject. It’s widely considered a gray area in the Paleo community. Much of the world’s population cannot tolerate lactose, the sugar found in milk. Shaping the almond flour/tapioca cookies. When you are nearly ready to bake the cookies, preheat your oven to 325°F. Line rimmed baking sheets with unbleached parchment paper. Remove the cookie dough from the refrigerator, remove the plastic wrap and using an ice cream scoop or two spoons, divide the dough into 14 to 16 portions, each 35 to 40 grams. Roll each piece of dough into a round between your palms, and place about 2 inches apart from one another on the prepared baking sheets.
These BLT bites have the T built right in because they’re served up on a cherry tomato. She’s using cream cheese here, which you can sub out Paleo approved cream cheese for and be all set. The B of the BLT is covered with a respectable amount of bacon per bite. The premise is that the current Western diet is contributing to the rise of chronic diseases such as obesity, heart disease and cancer. This diet, paleo proponents claim, can reduce inflammation, improve workouts, increase energy, help with weight loss, stabilize blood sugar and even reduce the risk of chronic diseases.
I’ve been doing a lot of sweets lately and I think it needs to come to an end! My kids would rather I not stop though 🙂 And I agree that outside pressure often gets us to do things that aren’t good for us – a lot of times without realizing. It’s hard to step back and figure out what’s actually good for US on the inside. I struggle with that sort of thing often.

If you’re craving toast or bread, you probably need more nitrogen. You can get that from high protein meats and fish. Don’t think of meat as a “snack”? Make some jerky. Even if you don’t have a dehydrator you can still make jerky. All you need to make jerky is a bit of time, some mild heat, and a dry environment. If you’ve been buying jerky, save yourself some loads of cash and make it yourself!
While healthy fats, proteins, and fruits and veggies are center stage in this eating approach, processed and packaged foods — as well as all grains, legumes, soy, and dairy — are off-limits in the paleo diet. Proponents of this eating approach argue that modern farming practices and food manufacturing create foods in these categories that are bad for our bodies.

Thank you for posting this! I have been practicing the paleo diet on and off for a few months and getting little cravings in between is hard because I know I can’t eat junk. Vanilla is the last ingredient in the cookies. (Yep, these almond cookies only have four ingredients. I know! Crazy, right?) You use a generous amount of vanilla extract! Two teaspoons. However, since the almond and maple bring such strong, lovely flavors to the table, the vanilla extract needs a little boost to get noticed. If you don’t love vanilla, reduce it to one teaspoon or omit completely. (If you omit, add two additional teaspoons of maple syrup to the recipe.)
Take 30 days and give it a shot – cut out the grains and dairy, start eating more vegetables and fruits, eat more humanely raised and non-grain fed meat, cut out the liquid calories and sugar, and see how you feel after the month is up. If you’re analytical and want numbers to use in your final verdict, get your blood work done at the beginning and end of the month.
These are absolutely incredible! I have been searching for a convincing recipe ever since I had to move to a restricted diet and these really do taste like traditional chocolate chip cookies. My sweet tooth boyfriend even eats them up so fast I have to hide them from him! I couldn’t be more pleased with how they came out. This recipe is certainly a keeper :)
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.

The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. So don’t try to replace it with Honey or Maple Syrup.

Make and chill the cookie dough. In a large bowl, place the 1 1/2 cups of almond flour and 1/2 cup tapioca flour, or 1 2/3 cup almond flour and 1/4 cup coconut flour), salt, baking soda, and sugar, and whisk to combine well. Create a well in the center of the dry ingredients, and add the coconut oil, eggs, and vanilla and mixing to combine. Add the chocolate chips to the cookie dough, and mix until the chips are evenly distributed throughout the dough. Both varieties of the dough will be soft but the almond flour/coconut flour combination will be softer than the almond flour/tapioca starch combination. Cover the bowl and place in the refrigerator for at least an hour and up to 2 days.

I’m vegan, and my boyfriend is (mostly) paleo. As soon as November hit I got a serious craving for chocolate chip cookies! I wanted to make something we could both enjoy, and after much research, I landed here. My guy is a chef, so he’s quite the critic. Until NOW, I haven’t been able to impress him with vegan/grain free cookies. This recipe is perfect! I made my own almond butter (wouldn’t have if I hadn’t run out…a blessing in disguise!), and used the coconut sugar, chilling it like you said. The following oils are typically ultra-processed and pro-inflammatory on account of their high levels of omega-6 fatty acids.
Yes, I’ve used half coconut flour. Still in the oven but they tasted good before I put them in! I also found them too crumbly the first time I made them, so I added a flax egg and half a cup of almond milk and then squeezed them into balls and flattened them. Much better consistency. And I find they need to bake 2-3 minutes longer, maybe even a bit more.
Oils are trickier. Loren Cordain, Ph.D., founder of The Paleo Diet Movement, breaks down which oils are healthy on the paleo diet: olive, walnut, flaxseed, macadamia, avocado and coconut oils are all allowed because they were gathered directly from the plant. While our hunter-gatherer ancestors probably did not consume flaxseed oil, it is allowed because of its content of high alpha-linolenic acid (ALA), a type of heart-healthy, anti-inflammatory omega-3 fatty acid.
Although it may seem like a no-brainer that eating a balanced diet rich in natural, fresh foods (like veggies, fruits, sustainable animal meats, some starchy plants, leaves, anti-inflammatory fatty acids and oils, nuts and seeds) improves health, research proves that “going Paleo” is one of the healthiest lifestyles and diets that modern humans can adopt.

Store any leftovers in a sealed container in the refrigerator or freezer.
If you just crave sweets in general (not an easy craving to fight off), you could be low in a number of nutrients, namely, sulfur. Cruciferous vegetables like broccoli, cabbage, cauliflower, kohlrabi, bok choy, kale, rutabaga, collard greens, turnip (root or greens), maca, radish, and wasabi, among others, are great sources of sulfur, Vitamin C and fiber. They’re also great for fighting off cancer cells.
I have been a chef for many years and had to go paleo due to health issues so I felt like I was missing out on cookies! I have to say these were the best choc chip gluten free cookies I have ever eaten felt like I was eating gluten cookies if not better! I followed the recipe to the letter I used unrefined coconut oil but I just wanted to ask what type of coconut oil do you use for this recipe refined or unrefined? Also can you use less coconut sugar? I love them as they are just thought to ask for other people sake some like less sweet things :) thanks a ton for this recipe your a blessing :)

This step is actually optional if you do not mind having flecks of zucchini visible in your zucchini cookies! However, in my house, my kids would not approve of anything green in their cookies, so I always blend the zucchini with the other wet ingredients! I also really enjoy the texture of these paleo breakfast cookies when the zucchini is fully blended.

I have been a follower of yours for a VERY long time as well as Paleo for 2 years now. I have Iost 50 pounds and way more inches I can account for. I went from a fluffy size 16 to a very thin size 4. I feel incredible. Better than going GF alone. I think to myself, I must have had intolerances to other grains and not realized it. I truly appreciate your sharing your dabbling in Paleo. I can relate to needing a cookie just for mom every once and a while. True, made me giggle. Make sure your Paleo readers get the lowest sugar content chocolate chips possible. We get the bars and chop them up.
Almond flour: Almond flour can often usually be replaced successfully with raw cashew flour. If you need to make these almond flour chocolate chip cookies nut-free, you can try replacing the almond flour with sunflower seed flour. They may take on a greenish tint, though, as the baking soda will activate the chlorophyll in the sunflower seeds, but it’s harmless.
I gave up paleo baking six months ago when I devoted myself to the 20lb subscription of Better Batter, but you’ve got me re-upping on my almond flour and coconut flour stock, opening my kitchen (and my heart) to paleo baking once again. These look amazing- I always had my paleo chocolate chippers turn out like some kind of sad, crumbly macaroon, but I trust that my children will be happy to share these with their friends. Thank you!

They’re great to have on hand for the mornings when you don’t have the brain power to think about breakfast. You can just pull some out of the freezer, heat in the microwave for about 1 minute, and have a healthy delicious breakfast you and your kids will love!

It stuck because I really think of these as the world’s easiest cookies. To make a batch, all you do is combine almond flour, baking powder, maple syrup, and vanilla extract in a large bowl and stir. That’s it! No butter, no eggs, no chilling the dough (or rolling it out). You just need four ingredients and a little elbow grease. After about 10 minutes of baking, you’re rewarded with macaron-flavored cookies that are crisp on the edges and chewy in the center.
These zucchini rolls look so good you might not want to eat them. But you will! They only have three ingredients, so it’s easy enough to keep stocked up and since it doesn’t take long to make these you don’t have to worry about storing them you can just make them as you need them so they’re fresh and crispy.

Fruits are nature’s nutrient-rich sweet treats and unprocessed, they have a whole host of health benefits to offer including detoxifying, disease-fighting antioxidants and phytonutrients, vitamins, minerals and fiber. Because of this and how well they’re generally tolerated by the body, all types of fruits are considered a great part of a healthy and balanced paleo diet. However, because most do contain high levels of fructose (a fast-digesting carbohydrate), many paleo enthusiasts recommend watching your fruit consumption, especially if you’re trying to lose weight.


Nuts and seeds – these guys are nutritious but many nuts and seeds are high in Omega-6 fatty acids which can be pro-inflammatory if consumed in large quantities and when your diet is not balanced by an equal amount of Omega-3 fatty acids found in oily fish like salmon and sardines, eggs and leafy greens. Basically, don’t gorge on buckets of nuts and seeds every day. The same goes for nut meals and flours such as almond meal. Whenever possible, try to activate nuts and seeds by soaking and then dehydrating them back, which makes them easier to digest.

When it comes to selecting the best fats to include in your paleo diet, almost any natural source is acceptable. This includes refined animal fats (choose naturally-raised, organic varieties), nuts oils (except for peanut which isn’t a nut), avocados and all parts of the coconut. Always avoid processed fats that contain harmful trans fats and try to ensure that you’re consuming a good balance of omega 3 to omega 6 fatty acids to minimize inflammation within your body. To help you to do this, avoid seed oils such as canola, soybean and vegetables oils and include fatty fish in your diet regularly.
If you follow a grain-free diet, you’ll want to make your own grain-free baking powder or order a specialty version online because most commercial baking powders contain a grain-based starch, usually cornstarch, to prevent clumping. If you don’t follow a grain-free diet, use whatever baking powder you have on hand. (As long as it’s fresh, of course.)
Roll the dough into 8 (75-gram) balls and place the remaining 1/4 cup (43 grams) of chocolate chips on the top and on the sides of the dough balls. You can also roll them into 16 smaller balls but then you need to adjust the baking time (a few minutes less than recommended below). Place 4" apart on the prepared baking sheet. Press the cookies down lightly with the palm of your hand.

I just found out that my friend has a nut allergy so I needed to alter a few recipes. After reading through a few paleo web pages, I’m finding that sunflower flour is a good 1:1 substitute for Almond flour. I’m testing that ratio with these cookies now. For a while, because of an issue with the amount of nuts that are “OK” for the diet I started substituted a home-made pumpkin seed flour and entree’s taste just as delicious!
It stuck because I really think of these as the world’s easiest cookies. To make a batch, all you do is combine almond flour, baking powder, maple syrup, and vanilla extract in a large bowl and stir. That’s it! No butter, no eggs, no chilling the dough (or rolling it out). You just need four ingredients and a little elbow grease. After about 10 minutes of baking, you’re rewarded with macaron-flavored cookies that are crisp on the edges and chewy in the center.
Note that any products made with any one or a combination of these grains are also off the cards. That means most breads, pastas, flours, baked goods and the majority of processed dry goods. Even if a product claims to be gluten free, it can still contain other grains (or pseudo-grains like quinoa or buckwheat) that subject the body to anti-nutrients like lectins.
Because the density of almond flour varies brand to brand depending on how finely ground it is, you may possibly want to add an extra tablespoon or two of almond flour to your dough if you are using a different brand than the ones I’ve mentioned. If you’re nervous, you can bake a test batch with just 2-3 cookies and see how they spread. If they spread more than you like, add a bit more flour and give that a whirl.
