This is a cute snack that can help you cool off on a hot summer day or night, and won’t impact your Paleo eating one bit. That’s because it uses just two ingredients in this sandwich, so it’s just a matter of cutting them up and eating them. The way they’ve presented it makes it a great party dish, because who doesn’t like eating things off of toothpicks. The trickiest part is getting the cucumbers and watermelon to be cut into the same sized squares so that they look good. If you’re just making a snack for yourself you don’t have to be so exact.
All types of poultry are great to include in a balanced paleo diet and are particularly valuable for those who are very active and, therefore, have higher protein needs. To ensure that the chicken you consume is as natural as possible, look for free range or organic varieties. If you’re trying to lose weight, keep in mind the fact that some cuts of chicken such as thighs contain more fat and calories than others and adjust your quality accordingly.

If you’re craving toast or bread, you probably need more nitrogen. You can get that from high protein meats and fish. Don’t think of meat as a “snack”? Make some jerky. Even if you don’t have a dehydrator you can still make jerky. All you need to make jerky is a bit of time, some mild heat, and a dry environment. If you’ve been buying jerky, save yourself some loads of cash and make it yourself!

Longtime readers know that they won’t find many Paleo desserts on my blog or in my cookbook or app. It’s not that I don’t enjoy the occasional sweet treat; I’m an admitted recovering sugar addict, after all. I’m just not a baker. I don’t have the patience or talent for it, and it’s probably for the best. I’d much rather tweak a cauliflower recipe over and over again than try to figure out how to make the perfect Paleo pastry—especially ’cause I’d be tempted to eat up all of my failed baking experiments. That’s also why whenever I bake, I rely on experts who have perfected the craft, so that I’m guaranteed a satisfying treat on the first try.
Stop putting pressure on yourself that’s not warranted. You are in a different place emotionally, physically and overall life then when training for Philly. Give yourself and your MIND a break and relish in your being chosen and ability to run this race. You have two great races in your future–NYC and Boston–what an honor!!!! Cookies look awesome. Btw, been meaning to tell you my whole family loves your recipes so they definitely are majorly enjoyed and appreciated by grown up children. Never was able to throw things together so fast and easy and have them taste and look so good. The taco salad is a fav as well as the chicken salad! Grains – especially wheat and anything with gluten. White rice is the least harmful of all grains and is added to dishes on occasions or for variety, it’s also part of the Perfect Health Diet protocol, which is what I follow. Make and chill the cookie dough. In a large bowl, place the 1 1/2 cups of almond flour and 1/2 cup tapioca flour, or 1 2/3 cup almond flour and 1/4 cup coconut flour), salt, baking soda, and sugar, and whisk to combine well. Create a well in the center of the dry ingredients, and add the coconut oil, eggs, and vanilla and mixing to combine. Add the chocolate chips to the cookie dough, and mix until the chips are evenly distributed throughout the dough. Both varieties of the dough will be soft but the almond flour/coconut flour combination will be softer than the almond flour/tapioca starch combination. Cover the bowl and place in the refrigerator for at least an hour and up to 2 days.

6/30/16 update: I’ve been making these paleo chocolate chip cookies with chia eggs lately to make them vegan and they’re just as delicious! To make a chia egg, mix together 1 tablespoon of ground chia seeds and 2.5 tablespoons water. Let sit 5-15 minutes or until goopy like an egg. I’ve also tried these cookies using a flax egg but I didn’t like the taste.
Growing research continues to suggest that eating a diet consisting of mostly whole foods is associated with more weight loss (2,3,4). Not to mention that highly processed foods tend to be higher in added sugar, sodium and trans fats, which research suggests may play a role in increased inflammation and actually counteract your weight loss efforts (5).  
Pumpkin seeds are one of the healthiest seeds you can eat, and making them taste as good as they can means you’ll be more inclined to eat them, and therefore more likely to benefit from the nutrients they contain. This recipe uses real jalapenos to deliver the heat, and keeps things elegant by only using the requisite number of ingredients to get these to taste right. For example, there’s olive oil, which is used to help roast the seeds, but it also helps the paprika and salt stick to the seeds so you get flavor on each one.
Healthy granola is hard to find because most supermarket options are loaded with sugars and unnatural additives, not to mention grains and oats that make them Paleo-unfriendly. Sure, there's a bit of debate as to whether true Paleo-ers can have foods like chocolate (which is made with milk solids and sugar). As articulated on Paleo Leap, an online resource for all things Paleo, "In the true sense of whether our Paleolithic ancestors enjoyed [foods like chocolate], the answer is almost always no, but the real question we should ask ourselves is whether they are healthy when consumed in moderation." In essence, it's up to the individual to decide whether or not to include chocolate in their nutritional regime. Paleo-ers who do say yes to chocolate often choose the dark variety -- it tends to be less processed and lower in sugar.
Alcohol is a no-no if you are strict paleo. Beer is made from grains, and liquor also contains traces of gluten. But, good news for cider-lovers: most hard ciders are gluten-free, so they are allowed. Check the label to be sure. Red wine is more accepted in the paleo community because it contains the antioxidant resveratrol, but sorry chardonnay lovers, white wine is technically not allowed.
Everyone loves guacamole, but avocados often get a bad rap for being unhealthy and full of fat, which just isn’t true. Avocados are full of nutritious ingredients and offer these powerhouse benefits, including lowering cholesterol and reducing risk of heart disease. Good news: Guacamole is 100 percent Paleo when made according to its traditional recipe, which includes avocado, lime, onion, tomato, and jalapeno. Individual serving sizes of guacamole, found at most supermarkets, make for a great grab-and-go snack. Try pairing your guac with fresh vegetables or plantain and kale chips for a salty crunch.
These chips aren’t actually made from anything except the cheese. It’s asiago cheese, a hard cheese that doesn’t contain much lactose and is therefore looked upon as OK by some Paleo followers. If you know that you don’t process any cheese well you’ll want to take a pass on this one, but if you can handle it in occasional doses it’s worth it. The two ingredients are asiago cheese and rosemary, so it doesn’t get much simpler.
What about those every day life moments? Those times when you want a little something sweet at 3pm but don’t want to find yourself devouring a creme-filled donut because you’re saving that for a different occasion. Or how about when you’re craving chocolate after dinner but don’t want to go all out with a triple decker chocolate cheesecake for dessert.

Legumes – beans, lentils, chickpeas and so on. Cashews are not legumes! There are some debates over whether some legumes are safe to consume in moderation, if prepared properly (soaked for 12 hours and then cooked really well to remove the phytic acid and make them easier to digest). You can read this article by Dr. Chris Kresser and this article by Dr. Loren Cordain and make up your own mind like we do. We include green beans and peas but avoid the rest.
In a nutshell, Paleo lifestyle and diet take inspiration and cues from our ancestors and the way we used to eat and live. Let’s get one thing clear: it’s not about re-enacting the caveman era. Nobody runs around in in loincloths and sets fires to cook their food (only occasionally). Paleo is about learning from ancestors but it is mostly fuelled by modern scientific and medical research and common sense.

That's why you should keep the ingredients for these quick and easy paleo snacks on hand. Because TBH, even if cavemen didn't eat snacks, well, they also wielded clubs on the regular, so things are just different now. 

These apple chips will do a good job of satisfying your need for something crunchy, as well as something sweet. They’re baked, not fried, so right off the bat you’re coming out ahead than if you were to eat an ordinary chip. These are apples and not potatoes so you’re avoiding eating potatoes, one of the foods not allowed on Paleo. The ingredients list contains just two items, apples and cinnamon, so this recipe is as pure as it gets, especially if you’re using organic apples, like you’re supposed to.
Shaping the almond flour/tapioca cookies. When you are nearly ready to bake the cookies, preheat your oven to 325°F. Line rimmed baking sheets with unbleached parchment paper. Remove the cookie dough from the refrigerator, remove the plastic wrap and using an ice cream scoop or two spoons, divide the dough into 14 to 16 portions, each 35 to 40 grams. Roll each piece of dough into a round between your palms, and place about 2 inches apart from one another on the prepared baking sheets.
These chips are made from butternut squash, but you won’t be able to tell by the way they taste. They bake up so crispy and crunchy you’d swear it was a potato chip if you didn’t know any better. They are using gingerbread seasoning on these, which is an interesting choice for a snack, and sure to give your taste buds a new experience. Compared to most snacks you’ll enjoy the fact that these rank pretty well in terms of the amount of carbs they contain, as well as the calories. Not that you’re counting any of that stuff on Paleo, it’s just nice to know.
So I’m not one to make my food in football shapes. Or use dye to color my food in my favorite teams colors. Probably because I don’t have a favorite team. But my home states team (the Broncos) are in the Superbowl this year so I’m obligated to act excited. I’d honestly rather just be moving into my new apartment and organizing crap than watching to game. But for social stigmas and reasons, I will be watching to game. Mainly so I can snack on food all day long and it’s not considered binge eating. Thanks, Superbowl.

*Sometimes instead of regular guacamole, I’ll make “guacachoke dip”, which is this: take a large can of artichoke hearts, an avocado, a quarter cup of lime juice, a pinch of cumin, and a pinch of chile powder and mix it up in a blender or food processor. You can add olive oil or coconut milk to make it creamier if you want. This little creation is amazing and can be served with pretty much any meat or veggie. Yum :)
These sweet potato chips do a great job of filling in for regular potato chips. They have the same texture you’re looking for, both as you pick them up and once you put them in your mouth. The sea salt ensures that they’re salty enough to satisfy, and the rosemary gives them a distinct flavor that really plays well with the sweet potato. And of course sweet potatoes bring a lot more to the table in regards to nutrients and fiber, so you’re actually helping yourself along with these rather than with potato chips that will only set you back.
I’m vegan, and my boyfriend is (mostly) paleo. As soon as November hit I got a serious craving for chocolate chip cookies! I wanted to make something we could both enjoy, and after much research, I landed here. My guy is a chef, so he’s quite the critic. I made my own almond butter (wouldn’t have if I hadn’t run out…a blessing in disguise!), and used the coconut sugar, chilling it like you said. Fruits are not only delicious, but they’re also great for you. That said, fruits (even paleo-approved ones) contain large amounts of fructose which, while much better than HFCS (high-fructose corn syrup), is still sugar. If you’re looking to lose weight on the paleo diet, you’ll want to cut back on your fruit intake and focus more on the vegetables allowed on the paleo diet. Perfect! I added pecans to your recipe and they came out perfect. The only issue I have is controlling myself so I don’t eat them all at once. I used butter instead of coconut oil and erythritol + molasses instead of coconut sugar to create my diabetic version of your cookie. I also added chopped pecans. Mmm-mm! Thanks. This is the best low-carb cookie recipe I’ve found.
I’ve been doing a lot of sweets lately and I think it needs to come to an end! My kids would rather I not stop though 🙂 And I agree that outside pressure often gets us to do things that aren’t good for us – a lot of times without realizing. It’s hard to step back and figure out what’s actually good for US on the inside. I struggle with that sort of thing often.
Most sour gummy candies are going to have sugar listed as the first ingredient, and maybe even the second and third. But on Paleo you won’t be eating anything that contains refined sugar, so they have to get their sweetness from a natural source. In this case they’re banking on the sweetness of watermelon, and using honey as a backup if the watermelon isn’t sweet enough. The sour flavor comes from lemon, a very creative way to reproduce a popular candy choice. The gelatin is grass-fed, an important consideration that keeps this recipe within the confines of the Paleo way of eating.
The China Study is frequently cited when criticizing the Paleo Diet – focusing on a vegetarian diet and consuming rice is healthier than the Paleo Diet. I respectfully disagree with that nutritional philosophy and strongly disagree with the conclusions drawn from that book [7], and will leave you to make your own conclusions based on your own self-experimentation.
