These make a great snack because they have a lot going on. There’s sweet potato in them, so you’ve got fiber built into them. They’ve also cut out all grain, using almond meal and coconut flour instead. The sweetness comes from honey, not from the coconut because the coconut is unsweetened. These aren’t sweet enough to be considered a dessert, and they’re billed as supplying energy thanks to the sweet potato they contain. Sweet potato is great as a snack because it is digested slowly and releases energy over a longer time period.


I have been baking gluten free for over 10 years and thought I had tried every cookie recipe out there, but alas I had not. I just made this recipe exactly as written and it is truly THE BEST GLUTEN FREE CHOCOLATE CHIP COOKIE OUT THERE! I wasn’t going to make them so big because I like to indulge in moderation but I decided to try giant cookies and I may never go back! I believe the size plays a big part in the success of this cookie but I’ll try them smaller next time and let you know the difference! I used butter and coconut sugar and followed the directions – AMAZING!
Vegetable oils aren’t really made from vegetables, which is why we’re still really confused how they came upon that name. They are usually made from junk oils that really aren’t fit for human consumption. These oils are very high in omega-6 fatty acids, which promote inflammation (as opposed to omega-3 fatty acids which are anti-inflammatory). They are debatably one of the major causes of heart disease, and are basically junk oils. While saturated fat remains demonized by mainstream nutrition, it really isn’t the culprit in poor health. These omega-6, junky oils are far more devastating for long-term health.
The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. So don’t try to replace it with Honey or Maple Syrup.
Shaping the almond flour/coconut flour cookies. You can shape these cookies in the same manner as the tapioca variety, but you will need to flatten each ball of dough into a 1/2-inch thick disk on the baking sheet after rolling into a ball. The coconut flour cookies will not spread as readily. Alternatively, divide the coconut flour cookie dough into two equal portions on generous pieces of parchment paper, shape each into a log about 1 1/2 inches in diameter, and wrap each tightly. Place the dough in the refrigerator to chill again for about 30 minutes. Unwrap each piece of dough, slice each into 8 pieces and place about 1 inch apart on the prepared baking sheet.

If you crave soda, you might be low in calcium. The best source of calcium is in your leafy greens. Make yourself a big salad out of spinach, kale, watercress, turnip greens, some broccoli, and sesame seeds. If you do dairy, throw some cheddar in there, too. Top it all off with some homemade Ranch dressing or a nice oil and vinegar dressing. This snack will not only help increase your calcium intake, it’ll also fill you up and leave no room for that soda you want to drink.


Oils are trickier. Loren Cordain, Ph.D., founder of The Paleo Diet Movement, breaks down which oils are healthy on the paleo diet: olive, walnut, flaxseed, macadamia, avocado and coconut oils are all allowed because they were gathered directly from the plant. While our hunter-gatherer ancestors probably did not consume flaxseed oil, it is allowed because of its content of high alpha-linolenic acid (ALA), a type of heart-healthy, anti-inflammatory omega-3 fatty acid.

Other food exclusions mandated in the paleo diet do have a clear and proven health benefit for all individuals. “Another group of foods you’ll cut out are processed vegetable oils and refined sugar, including white and brown sugars, agave, corn syrup, and all artificial sweeteners,” Hultin says. Added sugars have been linked in studies to a host of health problems, such as increased risk of obesity, type 2 diabetes, and heart disease. (8)


These cookies are amazing. I have been paleo for a few years now and have tried many cookie and baked good recipes around the web. I have to say Rachel you truly have a gift and are an amazing baker! I made these cookies the other day and they only lasted a day in my house. I made your chocolate chunks and they are so delicious.
