Grains – especially wheat and anything with gluten. White rice is the least harmful of all grains and is added to dishes on occasions or for variety, it’s also part of the Perfect Health Diet protocol, which is what I follow. I’m vegan, and my boyfriend is (mostly) paleo. As soon as November hit I got a serious craving for chocolate chip cookies! Shaping the almond flour/coconut flour cookies. You can shape these cookies in the same manner as the tapioca variety, but you will need to flatten each ball of dough into a 1/2-inch thick disk on the baking sheet after rolling into a ball. The coconut flour cookies will not spread as readily. Alternatively, divide the coconut flour cookie dough into two equal portions on generous pieces of parchment paper, shape each into a log about 1 1/2 inches in diameter, and wrap each tightly. Place the dough in the refrigerator to chill again for about 30 minutes. Unwrap each piece of dough, slice each into 8 pieces and place about 1 inch apart on the prepared baking sheet.
Legumes – beans, lentils, chickpeas and so on. Cashews are not legumes! There are some debates over whether some legumes are safe to consume in moderation, if prepared properly (soaked for 12 hours and then cooked really well to remove the phytic acid and make them easier to digest). Pseudograins like quinoa, amaranth and buckwheat are less harmful but they are still dense sources of carbohydrates and contain similar antinutrients to grains. They should be prepared carefully to remove some of the anti-nutrients such as phytic acid. Soak such grains in salted water for 8-12 hours, rinse and then cook well before consuming. Chia seeds also fall in this category. Buckwheat is the safest out of these.
These are absolutely incredible! I have been searching for a convincing recipe ever since I had to move to a restricted diet and these really do taste like traditional chocolate chip cookies. My sweet tooth boyfriend even eats them up so fast I have to hide them from him! I couldn’t be more pleased with how they came out. This recipe is certainly a keeper :)

I just made these for the first time and they are INCREDIBLE!! The only major modification I made was adding half the coconut sugar and I was pleasantly surprised that they are plenty sweet without the other 1/4 cup 🙂 I also ended up adding a few splashes of almond milk (I think my almond butter wasn’t well mixed and therefore a little too dry). These little sandwiches are really pushing the limits of a conventional sandwich. Bacon is serving as the “bread” and guacamole is the thing getting sandwiched. Avocados are bona fide superfood, and contain plenty of potassium, fiber, and healthy fat. Bacon is often the scourge of most diet plans, but on Paleo it is allowed so why not dig in? The two go really well together, and you’ll often find them as add-ons to deli sandwiches because they simply taste that good.

Now, there are lots of people who feel iffy about snacking. And I get that. The snacks many of us were brought up and traditionally reach for (animal crackers, pretzels, cheese flavored crackers) are kind of just filling up the belly instead of actually feeding the body what it is actually asking for...which is nutrients and protein! Since moving our family to a mostly-Paleo way of eating a few years ago, our snacking game has totally changed! Out with the starchy crackers. In with real food, nutrient dense nibbles! Nibbles that a little growing body will actually put to good use! That will actually keep them going until their next meal....with their sanity (and your's) intact.
With seafood, wild and sustainably caught is always best, as is sourcing your seafood from areas that are less likely to suffer from pollution and heavy metal contamination. Generally speaking, larger predatory fish are more likely to have higher levels of heavy metals than smaller fish and mollusks. It’s not a reason to avoid larger fish entirely, but it’s good to balance intake between larger and smaller fish varieties if you’re concerned about pollution.
When we go to the movies, I find myself always bringing healthier snacks. That’s probably not much of a surprise though. Every once in awhile we will splurge on the movie popcorn, but usually I have a purse packed with my favorite coconut oil and sea salt popcorn plus a few of these paleo chocolate chip cookies. Guys, they are RIDICULOUSLY GOOD. Think addicting, thick, chewy and full of melted dark chocolate puddles.
Sorry for just now seeing this! You’re the first person in about 600 reviews to say that they didn’t come out well so something definitely went wrong. Did you maybe pack your almond flour very full? I’d recommend going by weight. If you didn’t, I recommend trying again because every now and then, I accidentally leave an ingredient out of a recipe when baking and don’t realize until later. I know it’s probably not the answer you were looking for but it’s the only thing I can think of if you didn’t make any changes at all to the recipe.
Avocados make a great snack all by themselves, but they can be a little bland sometimes, and this is a great way to doll them up so they’re even tastier. This uses Greek yogurt, which is a fermented form of dairy and considered acceptable by some following the Paleo plan. Others see it as dairy is dairy and don’t eat it, so it’s up to you to decide if you want to incorporate a bit of fermented dairy like Greek yogurt into your diet or not. The rest of the recipe is just a bit of seasoning to help the avocado out in the flavor department.
