Fruit: nature’s sugar. As such, it’s far preferable to refined sugars and sugar products, but it’s also chock-full of fructose and therefore meant to be consumed in moderation. Still, fruit makes the basis of some awesome Paleo desserts and snacks. Consume one to three servings of fruit a day and limit high-sugar fruits to special indulgences. It’s also more beneficial to consume fruits in their raw, unaltered form—but we love smoothies, too.

These are delicious! I am an avid baker and try to use more healthier options when baking for myself and my family. Especially when it comes to treats for my toddler. I feel no guilt eating a whole batch and my two yr old LOVES them. She will not even give me a bite! I follow your insta and have made a few of your recipes! Never a disappointment. These turned out great! Usually my mom hates gluten free cookies I make but she approves of these lol. Also I deviated from the recipe a bit, added a little less baking soda and cut the almond butter with cashew butter thanks to winco allowing me to get small amounts of the nut butters without having to pay for the whole container. Thanks for the recipie! Oh and also added a smidgen of cinnamon – tastes like molasses cookies!!
Longtime readers know that they won’t find many Paleo desserts on my blog or in my cookbook or app. It’s not that I don’t enjoy the occasional sweet treat; I’m an admitted recovering sugar addict, after all. I’m just not a baker. I don’t have the patience or talent for it, and it’s probably for the best. I’d much rather tweak a cauliflower recipe over and over again than try to figure out how to make the perfect Paleo pastry—especially ’cause I’d be tempted to eat up all of my failed baking experiments. That’s also why whenever I bake, I rely on experts who have perfected the craft, so that I’m guaranteed a satisfying treat on the first try.
The second my mom saw these, she immediately started making plans to hide and portion them. She has the same problem I do with, ya know, not eating the whole batch. In one sitting. She gushed over them, and asked me, “HOW do you do it??” And I’m like, “HOW do you cook so well?!” My mom thinks it’s the funniest thing in the world that she cooks savory food like a boss, and I pretty much exclusively bake.
These nutrient-packed treats make for a convenient and delicious snack that’s paleo approved. They’re a great source of long-lasting energy and their high fat content will keep you full for longer. It is worth noting though, that because many types of nuts and seeds do contain phytic acid and other anti-nutrients that disrupt optimal digestion, it’s recommended that you consume them in moderation.

The paleo diet eliminates dairy because its advocates say many people are lactose intolerant, and because eating dairy has been associated with Crohn’s disease, among other claims. (4) While you wouldn’t want to eat lactose (a sugar found in dairy) if your body can’t tolerate it, there’s no proof that eating dairy causes Crohn’s or worsens symptoms in those who have been diagnosed. Make and chill the cookie dough. In a large bowl, place the 1 1/2 cups of almond flour and 1/2 cup tapioca flour, or 1 2/3 cup almond flour and 1/4 cup coconut flour), salt, baking soda, and sugar, and whisk to combine well. Create a well in the center of the dry ingredients, and add the coconut oil, eggs, and vanilla and mixing to combine. Add the chocolate chips to the cookie dough, and mix until the chips are evenly distributed throughout the dough. Both varieties of the dough will be soft but the almond flour/coconut flour combination will be softer than the almond flour/tapioca starch combination. Cover the bowl and place in the refrigerator for at least an hour and up to 2 days.
This snack has Paleo written all over it. It has just the essential ingredients needed for a fried almond snack, and they’ve made this incredibly simple to follow. Almonds are one of the healthiest nuts you can eat, but sometimes they can get a little boring. By frying them you immediately improve the taste, and since they have you frying them in a Paleo approved oil you will be staying on the Paleo path. Rosemary is an herb that really goes nicely with almonds, but the ghee steals the show in terms of taste, giving the almonds a nice buttery flavor.
The diet focuses on unprocessed, whole foods – healthy fats including saturated fat, grass-fed, free-range meat and eggs, lots of fish and seafood, vegetables, fruit, berries, nuts, seeds and some natural sweeteners. It excludes grains, legumes, processed sugar and most dairy. Some people include healthy dairy foods like kefir, full fat natural yogurt, some aged cheese and butter. That, of course, really depends on your sensitivities. We love this way of eating because it also focuses on local, organic produce and good farming practices.

Hi Dave, sorry for your troubles! More likely than not, the problem is that your almond flour is too coarse. I’ve added a link in the recipe with the brand I recommend (Honeyville) – it’s blanched and very fine and acts much more similarly to a traditional wheat flour than some coarser almond flours/meals do. In the meantime, you could try baking the cookie dough you have in a pan to make blondies so it doesn’t go to waste. Hope it still tastes delicious! Happy New Year.
Place the chocolate shards into a glass mixing bowl. You have two options for melting the chocolate: use a double boiler or a microwave. Most folks don’t own a double boiler, but you can make your own by grabbing a metal or glass bowl that fits snugly in a medium saucepan. Fill the saucepan with about two inches of water and bring it to a simmer. Place the bowl on top of the saucepan, making sure that the water never touches the bottom of the bowl.

Delicious – followed the recipe exactly only mine did not go down flat. Perhaps the nut butter was a bit dry? Anyhow, when I checked on the first tray they were still very perky and round so I quickly smooshed them with a fork and they were a bit cracked but held together well and were tasty. For the second batch, pressed them first with a fork and they puffed up nicely leaving classic peanut butter cookie marks. Will definitely make again.
