The diet focuses on unprocessed, whole foods – healthy fats including saturated fat, grass-fed, free-range meat and eggs, lots of fish and seafood, vegetables, fruit, berries, nuts, seeds and some natural sweeteners. It excludes grains, legumes, processed sugar and most dairy. Some people include healthy dairy foods like kefir, full fat natural yogurt, some aged cheese and butter. That, of course, really depends on your sensitivities. We love this way of eating because it also focuses on local, organic produce and good farming practices.
Bananas, apples, oranges, berries (strawberry, cranberry, blueberry, blackberry, raspberry), plantains, grapefruit, pears, peaches, nectarines, plums, pomegranates, pineapple, papaya, grapes, cantaloupe, cherries, apricot, watermelon, honeydew melon, kiwi, lemon, lime, lychee, mango, tangerine, coconut, figs, dates, olives, passion fruit, persimmon.
Let’s get this out of the way upfront: I know calling a cookie recipe the “world’s easiest” sounds a bit ridiculous, but I can explain. The name started out innocently enough — one day, I created an easy-to-make almond cookie recipe. I adored this recipe. In my excitement, I’d say to friends, “You have to try these almond cookies; they’re, like, the world’s easiest cookies.” And well, the name stuck.
The Paleo diet follows the basic principle of “eat foods a caveman would have access to.” Or better yet known as “eat whole foods.” This would include plenty of healthy fats, proteins and produce, but exclude grains, dairy and processed foods. Not only do I hate counting calories, but I know that calories are really only half of the battle, as they’re not all created equal – 400 calories of Doritos do NOT have the same effect on your body as 400 calories of high-quality vegetables and protein.
I have been a chef for many years and had to go paleo due to health issues so I felt like I was missing out on cookies! I have to say these were the best choc chip gluten free cookies I have ever eaten felt like I was eating gluten cookies if not better! I followed the recipe to the letter I used unrefined coconut oil but I just wanted to ask what type of coconut oil do you use for this recipe refined or unrefined? The rules are firm, and there’s no room for cheating, because it would defeat the resetting process. Paleo, on the other hand, is an ongoing style of eating, and occasional, non-Paleo food is generally considered part of a realistic routine.
Ive made a cople of your desserts now and have been SO impressed!!!!! Thank you for these great recipes!! My husband eats Paleo so I wanted to test these out for him today. Between my parents and my 4 yr old son, they ate almost the whole batch!! My dad even loved them and he has been known to eat 6 crispy kremes in one sitting without thinking twice! 😉 I used our blendtec blender to grind some raw almonds into flour (hadn’t tried that before) and with that the cookies came out delicious!! While dairy products are fairly obvious, grains and legumes can be confusing. Wheat is an obvious grain, but corn and corn-based ingredients also fall into this category. Pseudo grains, such as quinoa, amaranth, and buckwheat, are generally not recommended because they can cause grain-like digestive problems. Legumes means not only beans (including soy), but peas, lentils, and peanuts (including peanut butters and oils).
We have a penchant for finding an absurd amount of ways to sweeten our food, as evidenced by our sweetener-laden grocery store aisles. Our many sweeteners also have many names, making it difficult to suss out the added sugars in foods. There are only a few Paleo-friendly sweetening agents: fruit, raw honey, pure maple syrup, and coconut sugar, all of which are low on the glycemic index. Still, these should not be a diet staple.
These red pepper poppers are great for game day snacking, or anytime you get the notion. They do take a bit of time to make, so maybe not the best choice if you are looking for something fast to make to lessen your hunger pangs. These have meat and vegetables in pretty equal amounts, with bacon wrapped around the peppers and chicken breast acting as the stuffing. They kick it up a notch with some red pepper flakes so these will be spicy, bacony, and loaded with flavor. You might need something to dip them in, might we suggest this Paleo friendly Ranch dressing?
Thankfully I baked just one first, and was able to alter the recipe in time. It was so crumbly and dry, it was a bit like sawdust. (My almond butter was not runny at all, and it was pure almonds.) I added an extra egg and a few tablespoons of honey, hoping to get some moisture, and that helped considerably.I wouldn’t call them fabulous, but a good cookie if you’re Paleo or the full GAPS diet.
These make a great snack because they have a lot going on. There’s sweet potato in them, so you’ve got fiber built into them. Edible seaweeds are too often overlooked on a Paleo diet, but they boast an unparalleled nutritional profile. Among many essential nutrients, most kinds of seaweeds are loaded with iodine, an essential trace element to life. Iodine is especially important for the proper functioning of the thyroid gland. For most people on a SAD diet, the only reliable source of iodine is iodized salt. All types of berries are usually named as the go-to fruit of the paleo diet. With an extremely high antioxidant content, they contain fewer carbohydrates than other types of fruit meaning that they can be enjoyed without creating dramatic shifts in blood sugar levels which trigger hunger and cravings. The health benefits provided by berries differ based on which type you choose but range from improving your heart health to reducing inflammation and detoxifying. They also generally contain high levels of vitamin C to improve immune function.
These sweet potato chips do a great job of filling in for regular potato chips. They have the same texture you’re looking for, both as you pick them up and once you put them in your mouth. The sea salt ensures that they’re salty enough to satisfy, and the rosemary gives them a distinct flavor that really plays well with the sweet potato. And of course sweet potatoes bring a lot more to the table in regards to nutrients and fiber, so you’re actually helping yourself along with these rather than with potato chips that will only set you back.

These were absolutely delicious!!! Super quick and easy to make (Start to finish in <20 minutes). These were a big hit in our house. My husband, who was quite skeptical (and wondered why I was ruining good chocolate chip cookies, went back for seconds and thirds! The almond flour gives them a nice nutty flavor. Extra chocolate chips are recommended (increase from 1/2 to 3/4 cup in an entire batch if you like extra chocolate). Vegan friendly and gluten free. Super yummy-make these!!
I believe in parchment paper. It’s a DREAM for clean up and prevents burning. I hardly ever bake without it, and these ginger cookies are no exception. Some ginger cookies have a tendency to scorch on the bottom, and I’ve found that a light-colored baking sheet lined with parchment paper (or a silicone baking mat) is a fail proof plan for perfectly baked ginger cookies. (I think even Ina would approve.)
This is a classic gingerbread cookie recipe Paleo-style. Yup, you could make these and decorate your tree with them and eat a few too. You could make these and give them away to your friends and neighbors if you do that sort of thing. Whatever you do with them you will have so much fun because you can actually make and eat gingerbread cookies like everyone else now. Yeah, for eating “normal” even when you are on a Paleo diet.

Don’t feel bad that you can’t have Doritos now that you’re on Paleo, you just have to come up with snacks that aren’t bad for you. These chips use a mixture of coconut flour and almond flour, and have flax seed baked right in so you’re getting a fair bit of nutrition along with your snack. These make great dipping instruments for salsa, guacamole, or any Mexican-inspired dip. They won’t be short on flavor with all of the butter and spices they’re using, so you won’t feel like you’re missing out or stuck eating “health food”. Who knows, you might even end up preferring these.
Protein is a staple of the caveman diet- specifically options that are grass-fed, wild caught or organic, as these options are often from animals raised in environments that encourage natural behavior. And because our ancestors didn't just live off chicken and beef, they hunted a wide variety of meat, the more variety you can add to your proteins, the better!
I just made these for the first time and they are INCREDIBLE!! The only major modification I made was adding half the coconut sugar and I was pleasantly surprised that they are plenty sweet without the other 1/4 cup 🙂 I also ended up adding a few splashes of almond milk (I think my almond butter wasn’t well mixed and therefore a little too dry). I used 1 tbsp to measure out each cookie and they still turned out perfect. Thank you so much for the recipe! I’m sure it’s going to be used many more times in the future!

OMG! To me, these are the “holy grail” of chocolate cookies and even better because they are paleo! They were so easy to make and better than the usual tollhouse recipe I grew up with. I chopped up the chocolate super fine so when it baked, the cookies came out into flat discs- which I happen to LOVE a cookie like that. So I was very pleased! The best part about paleo baking is that you actually get filled up and even though they are such delicious cookies, I was very satisfied after only eating two. With other cookies made with regular flour, I tend to overeat. Thank you for this recipe. It is absolutely going to be a keeper! I have a feeling this might be one of those recipes I have memorized after a while! 🙂
6/30/16 update: I’ve been making these paleo chocolate chip cookies with chia eggs lately to make them vegan and they’re just as delicious! To make a chia egg, mix together 1 tablespoon of ground chia seeds and 2.5 tablespoons water. Let sit 5-15 minutes or until goopy like an egg. I’ve also tried these cookies using a flax egg but I didn’t like the taste.

Other than its unique stretching capabilities, tapioca flour (also interchangeably called tapioca starch) can help provide crispness to baked goods. This recipe only calls for one-half cup (60 grams) of tapioca starch, but if you were to use a greater amount of tapioca starch you could even make truly crispy and crunchy Paleo chocolate chip cookies. 
Grass-fed meat is recommended on the paleo diet because it is leaner than meat from grain-fed animals and has more omega-3 fatty acids, the healthy fats that reduce inflammation in the body and protect your heart. They say that low-fat weight-loss diets have proved in clinical trials and real life to be dismal failures, and that on top of it all, the percentage of fat in the American diet has been decreasing for two decades. Of course, snacking is completely optional on a Paleo diet. In fact, many people end up naturally eating only two meals per day, but it doesn’t mean that snacking is a bad idea, especially if the snack only contains healthy ingredients and prevents you from indulging with bad foods. They can also be great when on the go or as something to eat post workout. Just remember that your snacks should respect the basic principles of Paleo. This means that most fruits and nuts should be consumed only in moderation. Most fruits are high in the sugar fructose, which is toxic in higher doses and most nuts are high in polyunsaturated fat (PUFA), especially the omega-6 PUFA.
