Made this yesterday and it looked/tasted beautiful! Did not do anything special (whipping the white, creaming the butter, etc) .. just folded gently and it was just a beautiful golden color. I topped it with sesame seeds because the flax seeds had already been put away. I put the dough into two mini-loaf pans and they fit perfectly. Perfect way to get my bread cravings with gest. diabetes and got two thumbs up from my diabetic dad, too, who eventually stole my other loaf! Will be making again and again. Thank you!
The most common reason that any bread falls is that it needed to bake for longer. That being said, I’ll be perfectly honest – sometimes this keto bread recipe falls anyway, even despite doing everything else right. Fortunately this isn’t a huge deal because it still tastes delicious – IF you baked it for long enough and the center is cooked through.
This was delicious! my husband and children (2, 4, and 6) all loved it as well! We sliced it and ate as is. I used bobs red mill almond flour since that’s all I can get here in Canada so I’m sure the texture was a bit coarser than when using honeyville, but nonetheless one of the tastiest and easiest grain free breads I’ve made! Sometimes nothing but a giant cookie will do. There’s no need to turn on the oven or share when it comes to this Paleo dessert. Coconut and almond flours bring the fiber, while a scoop of protein powder and your favorite nut butter add a whole lot of (you guessed it!) protein. hi, I’m trying paleo and loving it! Especially this bread . Omgoodness my whole family tried it and love it! So thank you. My question is , I’m trying to do proper food combining also. Meat with veg or carb with veg. So, is this bread considered a carb and not to be combined with meat ? ( doing proper food combining). Just wondering because it has no white flour. I know paleo doesn’t mean calorie free and fat free, but …??

I just made this recipe and it was AMAZING! I used almond meal (because I just made almond milk a few days ago, so the “meal” was what I had left over). It came out so moist, light and fluffy….not dense at all! Do you think it would freeze well? What would happen if I only put 3 eggs in? Have you tried less eggs? I was told by someone.I offered these to that they remknded her of a “sweet hawaiin roll”(i made them in square brownie compartment pans) so i played with recipe and used a coarser fround almond meal and added aome ground flax seed for.a heartier, “grainier”texture. I also replaced the tapioca with arrowroot for less.sweetness and used avocado oil in place of coconut oil. The result? An amazing “multigrain” knockoff!
What is the tunnel effect? A hole or a tunnel of “less-cooked” batter as I am encountering? It’s not raw enough to not eat. Just a tad denser and wetter. But it’s truly delicious. I finish it off under the broiler for 2-3 minutes other wise the too does not brown even after 30-33 minutes. Any suggestions on cooking all the way through? (Oh…I should ad that I’m using a 5×9 Pyrex for baking. That’s prolly part of the problem).
This is the best gluten free bread recipe I’ve tried! So glad I found this. It’s not crumbly, very bread-like, just a bit dense. I loosely followed the recipe and changed a few things. I omitted the maple syrup to make it whole30. I didn’t have arrowroot so I subbed tapioca starch per some of the comments and added some chia seeds as well. Since there was so much coconut oil in it, I plan on experimenting and using olive oil so it doesn’t have too much of a coconut taste. My husband didn’t really notice it though. He is the gluten free one and he’s very picky about his bread, but this got his approval! I added some almonds on top and garlic and Italian herb seasoning to give it a flavor boost. I had trouble with this in the blender, maybe because I don’t have a very good one, so I will just use a mixing bowl next time. Thank you for sharing! I will be telling my friends about this!
The Sugar Addict's Total Recovery Program by Kathleen DesMaisons. While this isn't really a paleo book, it does point out issues with the foods we aren't eating. The books claims the excessive processed sugar consumed is responsible for "mood swings, depression, fatigue, fuzzy thinking, PMS, impulsivity ... [and] unpredictable temper." She says her research shows indulging in sugar highs should be treated much more seriously, akin to heroin or alcohol dependency, because sugar causes spikes in the neurotransmitters serotonin and beta-dopamine just like those drugs.
Vitamin D is the one supplement that would be paleo. At least it would be for those of us that don't live outside year round. You can have your D level measured. The low RDAs only prevent definable deficiences, not problems that take a long time to develop. Michael Holick, MD is a leading writer on this subject. I just made it using all the the optional ingredients but I didn’t have a food processor so I whipped/mixed everything by hand. One thing I noticed is that the top of the bread cracked unevenly. Could I have over fluffed the egg whites? Maybe creating an artificial cut in the middle could solve that next time? It rose very well and nearly doubled in size, though the size is still a bit small for my liking. I will most likely use 1.5x the amount next time. It smells great and I’m about to chow down on this!
Thank you so much! I didn’t have any flax for the first couple of batches, so subbed extra almond flour, then made it my bread machine and it was a hit. But for this batch, I doubled to make two loaves using the ground golden flax and baked it in the oven, and it was even better!!! My son who has celiacs loves it. This is a godsend with school lunches coming up again.

Another study, by the Karolinska Institute in Huddinge, Sweden, found that eating short-term Paleolithic or hunter-gatherer diets to prevent cardiovascular diseases showed some favorable effects, but they noted that further studies were warranted.
For most people the fact the Paleo diet delivers the best results is all they need. Improved blood lipids, weight loss, and reduced pain from autoimmunity is proof enough. Many people however are not satisfied with blindly following any recommendations, be they nutrition or exercise related. Some folks like to know WHY they are doing something. Fortunately, the Paleo diet has stood not only the test of time, but also the rigors of scientific scrutiny.
